The 'Bucho Raiano - Casa da Esquila (Sabugal)' is a gastronomic attraction located in Sabugal offering a special dish. The 'Bucho' is cooked in an iron pot and wrapped in linen to avoid it from bursting during boiling. It's accompanied with boiled potatoes and plenty of turnip greens and alongside a good red wine. The meat is previously marinated in water, red pepper (colorau), salt and garlic, and after three days, the filling is done.
