The lamprey rice is a specialty of the north of the country, made with lamprey, a fish caught in the rivers of the region. The lamprey is made with the blood of the fish, wine, salt, pepper, garlic and parsley and afterwards the rice is cooked in the same broth, so that it turns out loose.
