There are two ingredients that are responsible for the unique color and flavor of this dish. One is "eel dust", a mixture of ginger and pepper, or saffron and pepper. The second is called "bread unto" or "old bread unto" which, despite the name, is only fat from the belly of the pig, which was allowed to spoil. It is then watered down with "moira", which is the fat that is removed from the pan and to which coarse salt, vinegar and caldron broth is added.
